Pink pepper mayonnaise

Ingredients

  • 40 g egg yolk
  • 5 g pink pepper
  • 10 g mustard
  • 2 g wasabi
  • 4 drops tabasco
  • 20 g lime juice
  • 3 g salt
  • 200 g neutral oil I use sunflower oil

Instructions

  • Mix the egg yolk with the pink pepper, the mustard, the wasabi, the tabasco, the lime juice and the salt. Now blend this till smooth.
  • Then add the neutral oil and blend it till fully emulsified. After that transfer it into a piping bottle and keep it in your fridge for later.
