Tandoori sunflower seeds

Ingredients

  • 100 g water
  • 100 g sugar
  • 100 g sunflower seeds
  • tandoori spices, salt & citric acid

Instructions

  • First mix the water with the sugar and the sunflower seeds. Bring this to a boil for three minutes. After the three minutes transfer the seeds on a tray. Spread them and let them dry for around 30 minutes.
  • Then heat up some frying oil till it’s 160 °C and deep fry the sunflower seeds. Be careful with the caramelization, a bit too dark and they turn super bitter!
  • Then place on a tray lined with kitchen paper and season them with tandoori spices, salt & citric acid. This will give it a nice fresh and aromatic flavor. Once they have cooled down you can keep them dry and covered for later.
